My Darjeeling


High Tea, India Style

I found an Indian website (in English) which rates and sells Darjeeling teas directly from the Estates. It has detailed descriptions about each one and star ratings with number of votes. It's really fascinating. The site is kind of packed with info. The layout is a little crazy, but I guess that means it's authentic.

i was just thinking about you last night....as i was enjoying a cup of that lychee tea you gave me for christmas. i was thinking about how you and i should start a tea company...with my cousin [Dr. Green Tea] as a consultant.

i really want to learn about the differences in green tea quality.

on to this article: did i tell you i went to darjeeling and had some high grade tea on a tea plantation? it would cost a lot in the West.... frankly, i couldn't really tell the difference. but i did learn that steep time and water temperature time is all important! you can't heat the water too high [which most of us do]! and most good teas only need to be steeped for a couple minutes!

another surreal note: i took a photo class once with the guy who took the photo for the NY Times article. i was fascinated with his name: jehad.

let's start a tea company!

i should amend that most high-grade teas need only be steeped for like 30 seconds or something!
